Ingredients
- 250g butter, softened
- 3/4 cup icing sugar
- 3/4 cup custard powder
- 1 cup plain flour
- 1 teaspoon lemon rind
- 1 teaspoon vanilla essence
Instructions
Beat together butter and custard powder until light and fluffyAdd vanilla essence and lemon rindIn two batches beat in flour and icing sugar until well combined. Using floured hands roll into balls 1 teaspoon in size. Flatten gently with a fork Bake in 160oC oven for about 15 minutes. Prepare icing mixture. Match up biscuits of the same size and pipe icing mixture. Join together other halves.

Instructions
Beat together butter until paleAdd icing sugar and lemon juice and beat for 4 minutes. Scoop into a piping bag with the tip cut off one centimeter from the end to pip onto biscuits
