Italian Meringue Mararons with White Choc Mousse and Vanilla Cupcakes

The Sugared Escape kitchen had a win today with a successful batch of "footed"-ed macarons! That certainly deserves a big and embarrasing happy dance around the kitchen. 

These cupcakes mix it up a little with a mousse icing instead of a super sweet buttercream. 

Using cream and a little sugar instead of mountains of icing sugar means I can pile these ones as high as a mountain without those "too much icing" complaints. 

And a little hidden chocolate in the middle adds a secret surprise. 

I certainly didn't eat all the left over cake middles :)
