I really love things that are easier than they look - its makes creating and experimenting all the worth while when you hit it spot on. These cookies are just that.
With a quick sugar cookie base and a roll of marbled colour they make the cutest treats for a special person, or if your me - passed around the office in purple tupperware!
Simply roll out white fondant with a dot of gel colouring half mixed in to get a marbled effect. The same cookie cutter will make a perfect covering! I use a slash of icing sugar mixed with water to make sure they all stay in place.
Hazelnut and Orange Heart Cookies
Women's Weekly inspired sugar cookies
Ingredients
- 250g butter, softened
- 2 teaspoons orange rind
- 1/2 cup icing sugar
- 1/4 cup rice flour
- 2 cups plain flour
- 1 teaspoon cinnamon
- 1 teaspoon powdered ginger
- 1/4 cup hazelnut meal
Instructions
Beat butter, rind and icing sugar until light and fluffy.Stir into this the flour, ginger, cinnamon and hazelnut meal. Knead the dough on a floured surface (or floured baking paper) and roll to 5mm thick. Cover with baking paper and refrigerate for 30 mins.Use heart shaped cutter to cut out cookies. Bake at 180 degrees C for approximately 10 minutes. Stand to cool on wire racks.
