Cardamon and Vanilla Layer Cake

How sweet is cardamon mixed with vanilla? It is such a underrated spice that gets brought out every Christmas to spice up a batch of gingerbread or some biscuits.

But on its own this cardamon shines without hiding behind hefty amounts of cinnamon and nutmeg.

This cake also doesn't shy away from strong doses of vanilla - layered through the cake and all through the icing. And to top it all off with buttercream roses for a little bit of extra decoration.

After my fair share of meringue buttercream disasters this recipe worked a dream - thanks Savory Simple - there is nothing I love more than mastering a previous disaster - no thanks to Donna Hay on this one!

Roses piped with a star nozzle.
